Would it be acceptable for me to convert the FBX files to a gltf format after purchase so I can use it in my game? FBX isn't fully compatible with the game engine I plan to use.

Yes you can use them in any game projects, no credit needed or anything
Would you mind listing that in the asset pack description that they are under the CC0 (public domain) license?
